::Chocolate Heaven::


We had a big SPRING TRAINING EXTRAVAGANZA this last weekend. I felt like these cupcakes were appropriate for the occasion.

:: A FEW YUMMY CHOCO-HOLIC RECIPES ::

Toffee Brownies

1 (17.6-ounce) package brownie mix with walnuts

Vegetable oil cooking spray

3 (6-ounce) candy bars with almonds and toffee chips (recommended: Symphony brand)

Directions

Prepare the brownie mix according to package directions.

Line a 13 by 9-inch cake pan with aluminum foil and spray with vegetable oil cooking spray. Spoon in half of the brownie batter and smooth with a spatula or the back of a spoon. Place the candy bars side by side on top of the batter. Cover with the remaining batter. Bake according to package directions. Let cool completely, then lift from the pan using the edges of the foil. This makes is easy to cut the brownies into squares.

SURPRISE COOKIES




1 ¾ cup flour (add 2 tablespoons for high altitude)
¾ cup unsweetened cocoa powder
½ t. baking soda
½ t. salt
½ cup butter (room temp)
1 cup sugar
1 egg
½ cup whole milk
1 t. vanilla
About 15 large marshmallows halved crosswise


1. Stir flour, cocoa, baking soda, and salt in bowl
2. Mix butter and sugar until fluffy (about two min). Add egg, milk, and vanilla. Add the flour mixture and stir until just combined
3. Using a 1 ¾ inch ice cream scoop, drop dough onto baking sheets lined with parchment paper
4. Bake on 375 for 8-10 minutes
5. Immediately press marshmallow halves on top of each cookie and bake 1 more minute
6. Frost cooled cookies with one tablespoon of frosting.
7. Store in air tight containers


Frosting:
4 cups powdered sugar
6 T. butter
¼ cup cocoa powder
6 T. milk
¾ t vanilla
Melt butter and cocoa. Add to powdered sugar. Whisk in milk and vanilla.

YAY!!! I am so excited you posted these recipes. Those cookies are the most delicious things ever! I'm excited for the brownies! I made some Peanut Butter Bars off of Annaka's blog, and they were delicious!

so occassionally Kevin and I look at your blog and you don't know me but I am obsessed with your cute cupcakes did you take classes or you just figure it out on your own. I think cupcakes are way cuter than whole cakes (we actually had a cupcake cake at our wedding) I am going to try copying you ... you guys look cute and happy!

So what do you do with all of your cupcakes? Do you only make 12....or do you pull a KT and make 4-5 dozen? I end up eating most of what I make, and so I need to start only making only 1 batch at a time for my own (weight) sake! They look cute! Thanks for posting the recipes, I'll have to try some of them.
